The 25th of March is officially the waffle day in Sweden. That means tonight’s menu is set. Here’s our most delicious recipe, for light and crispy waffles.

When pancakes feel too much like an everyday dish, the waffles are ready to step in as the crispy cousin you haven’t seen in a while. Eat them as a starter, main course or dessert, it’s just a question of topping. Why are we not eating waffles more often? We should definitely do!

The celebration of the Waffle day actually has its origins in the Christian calendar. March 25th was in Swedish called “Vårfrudagen” and was celebrated in honor of Mary, mother of Jesus. The holiday was later moved to the nearest Sunday after the 25th of March every year. Since “Vårfru” in swedish is quite similar to the word for waffles “våfflor” some waffle loving people took the chance to rename March 25th to “Våffeldagen”. We can consider them quite successful.

The Waffle day is celebrated on the 25th of march in Sweden, Denmark and Norway. There are other waffles days around the world but that’s another story. It’s time to look at the reiceipe.

But before that some words about the topping. The topping decides what kind of waffle you’re having. Are you going for the waffle as a starter? Put on some whitefish caviar, creme fraiche with horseradish and lemon, it’s delicious. Or spinach and feta cheese and eat it as a main dish.

The favourite is off course the dessert waffle, or the one you have for breakfast. The different toppings to choose from are so many. Ice cream and strawberries, cloudberries with whipped cream, fruit, chocolate, syrup, butter. Ok, we have to stop here before we get too hungry.

Standard recipe for 8-10 crispy and light waffles.

125 g butter, 4 dl flour, 1 tablespoon baking sod, a pinch of salt, 2 eggs, 2 dl milk, 2 dl mineral water (for extra crispiness)

  1. Melt the butter
  2. Whisk all the dry ingredients with the eggs
  3. Add the butter, milk and water
  4. Let the batter set in the refrigerator for at least 15 minutes
  5. Make sure to preheat the waffle iron and start making crispy waffles
