Hey friends!
Do you know about Potionen under tian? It’s a Swedish instagram account where they create delicious recipes which cost less that 10 kr per serving! Genius – and a tremendous asset for students with a tight budget. Here is an example, spinach stew with lentils and lime.
For four portions, you’ll need:
- 4 portions of rice
- 3 dl dried green lentils
- 1 yellow onion
- 2 cloves garlic
- 1 chili
- 1 tsp cardamom
- 1 tsp cumin
- 3 dl oat cream
- 1 cube veg stock
- 1 lime
- Oil for frying
- Soy sauce to drizzle on top
Do this:
- Boil the rice.
- Boil your green lentils for 20 min or until tender. Be generous with the water.
- While things are boiling – defrost the spinach and chop the onion and garlic. Fry the onion and garlic over medium heat along with cardamom and cumin.
- When the onion has softened, add cream, veg stock and spinach. Let it simmer until the spinach has almost dissolved. Strain the lentils and add them to the stew. Press the lime and add the juice too.
- Serve with rice.
