Budget friendly midsummer meal tips coming your way

Spring semester is over and midsummer is upon us! Do you have plans for midsummer’s eve? Any traditions you’re keeping up? The traditional Swedish midsummer meal is usually different types of pickled herring, potatoes, sour cream and chives. After that, strawberries and cream or a yummy strawberry cake. Some choose to add sausages or meatballs to the table too, or some other type of fish. Here are a few tips for a midsummers meal that’s fun, budget friendly and really tasty.

  • Potato salad (or just a huge batch of those delicious färskpotatis)
  • Berries or fruit in season – strawberries are the best right now, but the price tends to sky rocket just before midsummer, so maybe opt for another fruit in season, like rhubarb?
  • Homemade bread with homemade dip (maybe parmesan cheese dip or one with smoked salmon?)
  • Different types of pickled herring if you’re into it.
  • Vegetable pie
  • Homemade summer pizza – why not try a pizza bianco with potatoes and dill (and if you’re feeling fancy, put some roe on there too).
